For many millennia wooden barrels were the storage medium of choice: safe, long lasting, easy to repair, and imparting a natural essence from the wood itself into what it contained. It also has the ability to pick up flavours from what it holds, store those favours and pass them back to whatever it stores in the future.Think about storing a fine brandy, saving the essence over the years, then putting it back into a good, well crafted ale. Or the richness of a vintage port or sherry enhancing the natural flavours & aromas of all types of beer; even spirits. The wood alone will give of itself - tannin, lending body to the liquid and imparting a dryness on the palate.
